Why Yunnan Coffee

Six Coffees, Six Expressions of Yunnan's Terroir
Imagine a journey through the highlands of Yunnan. Mist-shrouded valleys, sun-drenched terraces, crystal-clear mountain springs, and the Black-necked Cranes that return faithfully each year… the wind, light, fog, and soil of this land are all distilled into the flavor notes of each coffee bean.

Today, we invite you to unfold this Blackneck Coffee Flavor Map. With six cups, taste six expressions of Yunnan.

🗺️ First Stop: Floral Tide
Location: 1732m Cloud Forest
Flavor Expression: A Symphony of Morning Dew and Blossoms
A harmony of Typica, Catimor, and Hambella, slowly roasted to release a bright, dewy citrus acidity. The first sip unfolds layers of floral and passionfruit notes, finishing with a honey-smooth sweetness—a coffee to awaken the senses, perfect for an inspired morning.

🗺️ Second Stop: First Light
Location: 1586m Mountain Terraces
Flavor Expression: An Embrace of Warmth and Richness
A deep, slow roast extends the Maillard reaction, bringing out dark chocolate, roasted nuts, and caramel. With very low acidity and a creamy, full body, it ends with a lingering cocoa and cookie-like sweetness. This is a comforting coffee, ideal for afternoons or rainy days, accompanying reflection or reading.

🗺️ Third Stop: Fog & Forage
Location: 1627m Misty Valley
Flavor Expression: The Zen of Serenity and Balance
Pure Catimor, slowly ripened in the fog, develops a mild character. A medium roast highlights nutty and cocoa tones, with a soft, rounded mouthfeel and a latte-like smoothness that finishes clean. This is a calming coffee, suited for moments of focus or relaxation.

🗺️ Fourth Stop: Skyfruit
Location: 1713m “Sky Orchards”
Flavor Expression: The Dance of Brightness and Sweetness
The rare Red Bourbon accumulates vibrant citrus acidity and fruit sugars at high altitude. Lively citrus notes lead, followed by almond and plum sweetness, finishing juicy and clean. This is an energizing coffee, as if bottling the sunlight of the highlands.

🗺️ Fifth Stop: Pebble Wash
Location: 1618m Washed Terroir
Flavor Expression: Pure and Gentle Everyday Comfort
Washed processing provides a clean foundation, while a medium-dark roast reveals maple syrup and nutty sweetness. Silky in texture, it finishes with a spring-water freshness. This is an effortlessly enjoyable daily choice, gently accompanying any morning.

🗺️ Sixth Stop: Red Honey
Location: 1650m Mountain Slopes
Flavor Expression: The Gift of Harvest and Fermentation
With 60% mucilage retained for 120 hours of slow fermentation, it develops complex fruity layers. The vibrant acidity of ripe cherries, the wine-soaked strawberry depth, the lychee-honey sweetness—all conclude with a brown-sugar finish. This is a captivating coffee, like drinking in an entire Yunnan autumn.
