To craft this full-bodied creation, we selected richly flavored Bourbon and Catimor beans from mountainous areas at 1586 meters. The deep, slow roast deliberately extends the Maillard reaction, allowing sugars and amino acids to form complex notes of dark chocolate, roasted nuts, and caramel. The first sip reveals very low acidity—most organic acids have broken down in roasting—followed by a creamy, heavy body from deeply caramelized sugars and fibrous structure. The enduring cocoa and cookie sweetness in the finish mark the full transformation of sugars under dark roasting, offering warmth and satisfaction from start to finish.
